  1. Prepare the ingredients by slicing the carrots, cucumber, and lettuce into thin strips. Cook the rice vermicelli noodles according to package instructions.
  2. In a small bowl, mix together peanut butter, soy sauce, minced garlic, lime juice, honey, and water to make the spicy garlic peanut sauce.
  3. Dip a rice paper sheet into warm water for a few seconds until it becomes soft and pliable. Place it on a clean surface.
  4. Arrange a small amount of lettuce, mint leaves, cilantro leaves, carrots, cucumber, rice vermicelli noodles, and cooked shrimp in the center of the rice paper.
  5. Fold the sides of the rice paper over the filling, then roll it up tightly from bottom to top.
  6. Repeat with the remaining ingredients.
  7. Serve the summer rolls with the spicy garlic peanut sauce and garnish with crushed peanuts.
