Preheat the oven to 180°C (350°F) and grease a baking dish.

Peel the onions and slice them into thick rounds.

In a large pan, heat the olive oil over medium heat.

Add the onions to the pan and cook until they are soft and golden brown, about 10 minutes.

In a small bowl, combine the gluten-free breadcrumbs, nutritional yeast flakes, thyme leaves, salt, and pepper.

Transfer the cooked onions to the greased baking dish and sprinkle the breadcrumb mixture evenly over the top.

Bake in the preheated oven for 30 minutes, or until the breadcrumbs are golden brown and crispy.
