Cook the wild rice according to the package instructions. Drain and let it cool.

In a large bowl, combine the cooked wild rice, mixed beans, diced red bell pepper, sliced cucumber, halved cherry tomatoes, finely chopped red onion, and fresh parsley.

In a small bowl, whisk together the fresh lemon juice, olive oil, salt, and black pepper.

Pour the dressing over the salad and toss to combine.
