Peanut-Stuffed Okra Fingers

Wash the okra and pat dry. Cut off the tops and make a slit lengthwise.

In a pan, dry roast the peanuts until golden brown. Remove from heat, let cool, and coarsely grind them.

In a mixing bowl, combine the ground peanuts, besan, rice flour, turmeric powder, red chili powder, coriander powder, cumin powder, and salt.

Stuff the okra with the peanut mixture.

Heat oil in a pan for frying. Fry the stuffed okra fingers until golden brown and crispy.

Drain on a paper towel to remove excess oil.
