Cook the fusilli pasta according to package instructions. Drain and set aside.

In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

Add mixed vegetables to the pan and cook until tender-crisp.

In a separate small pan, heat anchovy fillets until they dissolve and form a glaze.

Add the anchovy glaze to the pan with the vegetables and toss to coat.

Add cooked fusilli pasta to the pan and mix well.

Stir in lemon juice, fresh parsley, salt, and black pepper.

Cook for an additional 2-3 minutes, until everything is heated through.
