  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the gluten-free flour blend, granulated sugar, baking powder, and salt.
  3. Add the dairy-free spread and vanilla extract to the dry ingredients. Mix until the mixture resembles coarse crumbs.
  4. Gradually add almond milk, 1 tablespoon at a time, until the dough comes together.
  5. Divide the dough into three equal portions. Add a different food coloring to each portion and knead until the color is evenly distributed.
  6. Roll out each colored dough to a thickness of about 1/4 inch.
  7. Use a tulip-shaped cookie cutter to cut out tulip shapes from each colored dough.
  8. Place a lollipop stick in the center of each tulip shape and gently press the dough around it.
  9. Transfer the cookie pops to the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden.
  10. Allow the cookie pops to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  11. In a small bowl, whisk together powdered sugar and water to make a glaze.
