  2. Press tofu to remove excess water, then cut into cubes.
  3. In a large pan, heat sesame oil over medium heat.
  4. Add tofu and stir-fry until golden brown, about 5 minutes.
  5. Add garlic and ginger, and cook for another minute.
  6. Add broccoli, carrots, bell peppers, snow peas, and mushrooms. Stir-fry for 3-4 minutes, until vegetables are tender-crisp.
  7. In a small bowl, whisk together soy sauce and rice vinegar.
  8. Pour the sauce over the vegetables and tofu, and stir to coat.
  9. Cook for another 2 minutes, until everything is heated through.
