Cook brown rice according to package instructions.

Press tofu to remove excess water, then cut into cubes.

In a large pan, heat sesame oil over medium heat.

Add tofu and stir-fry until golden brown, about 5 minutes.

Add garlic and ginger, and cook for another minute.

Add broccoli, carrots, bell peppers, snow peas, and mushrooms. Stir-fry for 3-4 minutes, until vegetables are tender-crisp.

In a small bowl, whisk together soy sauce and rice vinegar.

Pour the sauce over the vegetables and tofu, and stir to coat.

Cook for another 2 minutes, until everything is heated through.
