Red Lentil Curry

Rinse the red lentils under cold water until the water runs clear.

In a large saucepan, heat some oil and sauté the chopped onion, garlic, and ginger until golden brown.

Add the diced tomatoes and cook until they soften.

Add the turmeric powder, cumin powder, coriander powder, garam masala, chili powder, and salt. Stir well.

Add the red lentils, coconut milk, and vegetable stock. Bring to a boil, then reduce the heat and simmer for 20-25 minutes or until the lentils are cooked.

Stir in the lemon juice and fresh coriander.

Serve hot with rice or naan bread.
