Veggie Roll-Up
Tortilla wraps were first made by the indigenous peoples of Mesoamerica, such as the Aztecs and Mayans, who used corn as the main ingredient.
This is vegan and gluten free recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Prepare all the ingredients by washing and cutting them.

Lay a tortilla wrap on a flat surface.

Spread a tablespoon of hummus evenly on the tortilla wrap.

Layer the bell peppers, cucumber, carrot, spinach leaves, and avocado on top of the hummus.

Drizzle lemon juice over the vegetables and sprinkle with salt and black pepper.

Roll up the tortilla tightly, tucking in the sides as you go.

Repeat with the remaining tortilla wraps and ingredients.

Heat a grill pan or skillet over medium heat.

Place the veggie roll-ups on the pan and cook for 2-3 minutes on each side, until lightly toasted.

Remove from heat and let cool for a few minutes.

Slice the roll-ups into bite-sized pieces.
