In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.

Add vegetable broth, white beans, potato, bay leaf, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Remove bay leaf. Using an immersion blender, blend the soup until desired consistency is reached.

Stir in heavy cream and cook for an additional 5 minutes.

Serve hot, garnished with fresh parsley.
