Roasting vegetables brings out their natural sweetness and enhances their flavors.

Preheat the oven to 200°C (400°F).

Wash and chop all the vegetables into bite-sized pieces.

In a large mixing bowl, combine the chopped vegetables, olive oil, minced garlic, mixed herbs, salt, and black pepper. Toss until the vegetables are evenly coated.

Spread the vegetables in a single layer on a baking sheet.

Roast in the preheated oven for 40-45 minutes, or until the vegetables are tender and slightly browned.

Remove from the oven and let it rest for 10 minutes.
