  2. In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are softened.
  3. Add split peas, vegetable stock, bay leaf, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 1 hour or until split peas are tender.
  4. Remove bay leaf from the pot. Use an immersion blender to blend the soup until smooth, or transfer to a blender and blend in batches.
  5. Return the soup to the pot and heat over low heat for a few minutes. Serve hot.
