Vegetarian Loaf (No-Meat Meatloaf)
The term ‘meatloaf’ originated in medieval Europe, where it was made with minced meat and various other ingredients. The vegetarian version of meatloaf has gained popularity in recent years as a healthier and cruelty-free alternative.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 16.

Preheat the oven to 375°F (190°C).

In a saucepan, cook the lentils and quinoa according to package instructions.

In a large skillet, sauté the carrots, onion, and garlic in olive oil until softened.

In a large bowl, combine the cooked lentils and quinoa, sautéed vegetables, tomato paste, tamari sauce, nutritional yeast, ground flaxseed, dried oregano, dried basil, salt, and black pepper. Mix well.

Add the bread crumbs and mix again until well combined.

Transfer the mixture to a greased loaf pan and press it down firmly.

Spread ketchup on top of the loaf.

Bake in the preheated oven for 45 minutes.

Remove from the oven and let it rest for 10 minutes before slicing.
