Vegetarian Green Chili
Green chili is a popular dish in the Southwestern United States, especially in New Mexico where it is the official state vegetable.

Heat olive oil in a large pot over medium heat.

Add onion, garlic, green bell pepper, jalapeno pepper, and green chilies. Saute for 5 minutes until vegetables are softened.

Stir in diced tomatoes, cumin powder, chili powder, salt, and black pepper. Cook for another 5 minutes.

Add vegetable broth, kidney beans, and corn. Bring to a boil, then reduce heat and simmer for 20 minutes.

Remove from heat and let it rest for 5 minutes.

Serve hot with fresh cilantro and lime wedges.
