  1. Preheat the grill or oven to 400°F (200°C).
  2. Slice the eggplant into 1/2-inch thick rounds.
  3. Brush both sides of the eggplant slices with olive oil and sprinkle with salt.
  4. Grill or bake the eggplant slices for about 5 minutes on each side, until tender and slightly charred.
  5. In a food processor, pulse the onion and garlic until finely chopped.
  6. Add the grilled eggplant, breadcrumbs, Parmesan cheese, egg, salt, and black pepper to the food processor. Pulse until well combined.
  7. Shape the mixture into 4 patties and let them rest for 10 minutes.
  8. Heat a grill pan or skillet over medium heat and cook the patties for about 4-5 minutes on each side, until golden brown.
  9. Toast the hamburger buns.
  10. Assemble the burgers by placing a lettuce leaf, a tomato slice, and a cooked eggplant patty on each bun.
  11. Spread mayonnaise and ketchup on the top bun.
