  1. Boil water and cook the sweet potato glass noodles according to the package instructions. Drain and rinse with cold water. Set aside.
  2. Blanch the spinach in boiling water for 1 minute. Drain and rinse with cold water. Squeeze out excess water and cut into bite-sized pieces.
  3. Julienne the carrots, bell peppers, and onion.
  4. Heat a pan over medium heat and add sesame oil. Stir-fry the garlic until fragrant.
  5. Add the carrots, bell peppers, and onion to the pan. Stir-fry until the vegetables are tender.
  6. Add the cooked noodles and spinach to the pan. Stir-fry for 2-3 minutes.
  7. In a small bowl, mix soy sauce, sugar, salt, and black pepper. Pour the sauce over the noodles and vegetables. Stir-fry for another 2 minutes.
  8. Remove from heat and garnish with toasted sesame seeds and chopped green onions.
  9. Let the dish rest for 10 minutes before serving.
