  1. Wash the basmati rice and soak it in water for 30 minutes.
  2. Heat ghee in a large pan and add cumin seeds, cinnamon stick, bay leaf, cloves, and cardamom pods. Fry for a minute.
  3. Add sliced onions and sauté until golden brown.
  4. Add ginger-garlic paste, green chili, and tomatoes. Cook until tomatoes are soft.
  5. Add turmeric powder, biryani masala powder, and salt. Mix well.
  6. Add mixed vegetables and cook for 5 minutes.
  7. Drain the soaked rice and add it to the pan. Mix well.
  8. Add water, cover the pan, and cook on low heat for 15-20 minutes or until the rice is cooked.
  9. In a separate pan, heat ghee and fry cashews and raisins until golden.
  10. Once the rice is cooked, remove from heat and let it rest for 10 minutes.
  11. Garnish with fried cashews, raisins, fresh coriander leaves, mint leaves, and lemon slices.
  12. Serve hot and enjoy!
