  2. Slice the zucchini, yellow squash, tomatoes, and red onion into thin rounds.
  3. Finely chop the garlic cloves and remove the thyme leaves from the sprigs.
  4. In a baking dish, arrange the vegetable slices in an alternating pattern, slightly overlapping each other.
  5. Sprinkle the chopped garlic and thyme leaves over the vegetables.
  6. Drizzle the olive oil evenly over the vegetables.
  7. Season with salt and black pepper.
  8. Bake in the preheated oven for 40-45 minutes, or until the vegetables are tender and lightly browned.
  9. Remove from the oven and let it rest for 10 minutes.
  10. Sprinkle grated Parmesan cheese over the top.
  11. Serve hot and enjoy!
