Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent. Add eggplant, zucchini, and bell pepper. Cook until vegetables are slightly tender. Stir in tomatoes, herbs de Provence, salt, and black pepper. Reduce heat to low, cover, and simmer for 30 minutes. Remove from heat, let it rest for 10 minutes. Serve hot and enjoy!
