Rinse quinoa and cook it in vegetable broth according to package instructions. Set aside.

Heat olive oil in a large pan over medium heat. Add onion, carrot, celery, garlic, bell pepper, and mushrooms. Sauté until vegetables are tender.

Add cooked quinoa, dried thyme, dried sage, salt, and black pepper to the pan. Stir well to combine.

Cook for another 5 minutes, allowing the flavors to meld together.
