Preheat the oven to 375°F (190°C).

In a pan, heat olive oil and sauté garlic until fragrant.

Add mixed vegetables, salt, and pepper. Cook until vegetables are tender.

Lay out a sheet of phyllo dough and brush with olive oil.

Place a spoonful of the vegetable mixture on one end of the phyllo dough.

Fold the sides of the dough over the filling and roll it up tightly.

Repeat with the remaining phyllo dough and vegetable mixture.

Place the parcells on a baking sheet and brush with olive oil.

Bake for 15 minutes or until golden brown.

Let them rest for 5 minutes before serving.
