  1. Heat vegetable oil in a wok or large skillet over medium heat. Add minced garlic and grated ginger, and sauté for 1 minute.
  2. Add sliced red bell pepper, broccoli florets, sliced carrots, and snow peas. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, red pepper flakes, salt, and black pepper.
  4. Pour the sauce over the vegetables and stir-fry for an additional 2 minutes.
  5. Add diced mango, cashews, chopped green onions, and cilantro. Stir-fry for another minute.
  6. Remove from heat and let it rest for 5 minutes.
  7. Serve the vegetable mango stir-fry hot with steamed rice or noodles.
