  1. Rinse the barley under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and celery stalks. Cook until vegetables are softened, about 5 minutes.
  3. Add barley, vegetable broth, water, diced potato, diced tomatoes, green beans, peas, bay leaf, thyme, salt, and black pepper to the pot.
  4. Bring the soup to a boil, then reduce the heat and simmer for 30 minutes, or until the barley and vegetables are tender.
  5. Stir in the spinach and cook for an additional 2 minutes, until wilted.
  6. Remove the bay leaf and serve the soup hot. Enjoy!
