Preheat the oven to 375°F (190°C). In a large pot of boiling water, blanch the cabbage leaves for 2 minutes. Drain and set aside. In a skillet, sauté the onion and garlic until translucent. Add the quinoa, black beans, tomato sauce, oregano, cumin, salt, and black pepper. Cook for 5 minutes. Place a spoonful of the quinoa mixture onto each cabbage leaf and roll it up. Place the rolls in a baking dish. Bake for 30 minutes. In a small bowl, mix together the fresh cilantro and lime juice. Serve the cabbage rolls topped with the cilantro-lime sauce and sliced avocado.
