  1. Preheat the grill to medium-high heat. Cut the tops off the red bell peppers and remove the seeds.
  2. In a saucepan, cook the quinoa according to package instructions.
  3. In a large bowl, combine the cooked quinoa, black beans, corn kernels, diced onion, minced garlic, diced tomato, chopped parsley, olive oil, lime juice, salt, and black pepper. Mix well.
  4. Stuff the red bell peppers with the quinoa mixture and top with vegan cheese.
  5. Place the stuffed peppers on the grill and cook for 20-25 minutes, or until the peppers are tender and the cheese is melted.
