  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  3. In a large bowl, cream together the vegan butter, granulated sugar, and brown sugar until light and fluffy.
  4. In a small bowl, mix together the flaxseed meal and water. Let it sit for 5 minutes to thicken.
  5. Add the flaxseed mixture and vanilla extract to the butter-sugar mixture. Mix well.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Roll the dough into tablespoon-sized balls and roll each ball in the cinnamon sugar mixture.
  8. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are golden brown.
  10. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
