Heat sesame oil in a large pan or wok over medium heat. Add garlic and ginger, and sauté for 1 minute.

Add seitan, broccoli, carrots, and red bell pepper to the pan. Stir-fry for 5-7 minutes, until vegetables are tender.

Add cooked rice noodles to the pan and stir in soy sauce. Cook for an additional 2-3 minutes.

Remove from heat and squeeze lime juice over the noodle bowl. Garnish with spring onions, cilantro, and crushed peanuts.
