Panelle is a popular street food in Sicily, particularly in the city of Palermo. It has been enjoyed for centuries and is often served in a sandwich called ‘pane e panelle’.

In a saucepan, whisk together the chickpea flour, water, and salt until smooth.

Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and pulls away from the sides of the pan.

Remove from heat and spread the mixture onto a greased baking sheet. Smooth it out with a spatula and let it cool for about 10 minutes.

Cut the cooled mixture into squares or rectangles.

Heat olive oil in a frying pan over medium-high heat.

Fry the panelle until golden brown on both sides, about 3-4 minutes per side.

Remove from the pan and drain on paper towels.

Sprinkle with fresh parsley and serve hot.
