Vegan (Say What?!) Gumbo
Gumbo is a classic Louisiana dish that originated in West Africa. It typically includes meat or seafood, but this vegan version is just as flavorful and satisfying!

Heat vegetable oil in a large pot over medium heat.

Add onion, bell pepper, and celery. Sauté for 5 minutes.

Add garlic and sauté for another minute.

Add okra and tomatoes. Cook for 5 minutes, stirring occasionally.

Pour in vegetable broth and add creole seasoning, smoked paprika, cayenne pepper, thyme, and bay leaves. Stir well.

Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

Add black-eyed peas and cook for another 10 minutes.

Remove bay leaves and season with salt and black pepper.

Serve hot, garnished with chopped green onions and fresh parsley.
