Vegan Peanut Butter Muffins
Peanut butter was first introduced as a health food in the early 1900s and quickly gained popularity.

Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.

In a large bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, mix together the peanut butter, maple syrup, almond milk, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped peanuts.

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
