  5. Add the rinsed lentils and vegetable broth to the pot.
  6. Bring the soup to a boil, then reduce heat and simmer for 20 minutes or until the lentils are cooked.
  7. Use an immersion blender to blend the soup until smooth.
  8. Stir in the lemon juice, fresh cilantro, salt, and black pepper.
  9. Let the soup rest for 5 minutes before serving.
  10. Serve hot and garnish with additional cilantro if desired.
