Vegan Mac and Cheese
Traditional mac and cheese is often made with dairy products, but this vegan version uses cashews to create a creamy and cheesy sauce.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Cook the macaroni according to package instructions. Drain and set aside.

In a blender, combine cashews, nutritional yeast, lemon juice, garlic powder, onion powder, Dijon mustard, turmeric powder, salt, pepper, and water. Blend until smooth and creamy.

Preheat the oven to 350°F (175°C).

In a large mixing bowl, combine the cooked macaroni and the cashew cheese sauce. Mix well to coat the macaroni.

Transfer the macaroni mixture to a baking dish. Sprinkle panko breadcrumbs and paprika on top.

Bake in the preheated oven for 15-20 minutes, or until the breadcrumbs are golden brown.

Remove from the oven and let it rest for 5 minutes.

Garnish with fresh parsley before serving.
