Vegan Jambalaya
Jambalaya is a traditional Louisiana dish with influences from Spanish, French, and West African cuisines.

Heat olive oil in a large pot over medium heat.

Add onion, bell pepper, celery, and garlic. Sauté until vegetables are tender.

Stir in tomatoes, vegetable broth, rice, Cajun seasoning, paprika, thyme, oregano, and bay leaves.

Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes.

Add kidney beans and okra. Cook for an additional 10 minutes.

Season with salt and black pepper.

Garnish with green onions and fresh parsley.

Serve with lemon wedges.
