Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.

In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

In a separate bowl, mix together the coconut oil, maple syrup, almond milk, vanilla extract, and apple cider vinegar.

Gradually add the wet ingredients to the dry ingredients and mix until just combined.

Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

In the meantime, prepare the frosting by beating together the vegan butter, powdered sugar, and scraped vanilla bean seeds until light and fluffy.
