In a large pot, heat some oil and sauté the chopped onion and garlic until translucent.

Add the diced potatoes and vegetable broth. Bring to a boil and let it simmer until the potatoes are tender.

Stir in the coriander (cilantro) leaves and cook for another 2 minutes.

Remove from heat and let it cool slightly.

Using a blender, puree the soup until smooth.

Return the soup to the pot and stir in the coconut milk, lime juice, salt, and black pepper.
