  2. In a large bowl, combine the cornmeal, all-purpose flour, baking powder, and salt.
  3. In a separate bowl, whisk together the almond milk, maple syrup, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the frozen corn kernels and chopped green onions.
  6. Spoon the batter into a greased muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
