Polish Beet Soup, also known as ‘Barszcz’, is a traditional Polish dish often served during Christmas Eve dinner.

  1. Peel and grate the beetroot.
  2. Chop the onion and garlic.
  3. In a large pot, sauté the onion and garlic until translucent.
  4. Add the grated beetroot and cook for 5 minutes.
  5. Add the vegetable broth, diced potato, sliced carrot, shredded cabbage, bay leaf, and allspice.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Stir in the apple cider vinegar, salt, and pepper.
  8. Remove from heat and let the soup rest for 10 minutes.
  9. Serve hot with a dollop of sour cream and garnish with fresh dill.
