Peel and chop the sweet potatoes, bell peppers, onion, garlic cloves, and ginger.

In a large pot, heat some oil over medium heat. Add the onion, garlic, and ginger and cook until fragrant.

Add the curry powder, paprika, and cayenne pepper to the pot and stir well.

Add the sweet potatoes, black beans, bell peppers, and coconut milk to the pot. Stir everything together.

Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the sweet potatoes are tender.
