Boil the beetroot until tender. Peel and grate it.

Finely chop cucumber, radish, spring onion, and dill.

In a large bowl, combine the grated beetroot, chopped vegetables, kefir, lemon juice, salt, and sugar.

Cover and refrigerate for at least 2 hours.
