Preheat the oven to 350°F (175°C). Grease a loaf pan.

In a small bowl, combine flaxseed meal and water. Let it sit for 5 minutes to thicken.

In a large bowl, mash the ripe bananas.

Add the maple syrup, coconut oil, vanilla extract, and flaxseed mixture to the mashed bananas. Mix well.

In a separate bowl, whisk together the whole wheat flour, baking powder, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Fold in the chopped walnuts.

Pour the batter into the greased loaf pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.
