The French onion soup originated in France in the 18th century and was traditionally eaten by poor people as a cheap and filling meal.

Preheat the oven to 400°F (200°C).

Peel and slice the onions into thick rounds.

In a large bowl, toss the onion slices with olive oil, thyme, salt, and black pepper.

Place the seasoned onion slices on a baking sheet and roast in the preheated oven for 30-40 minutes, or until golden brown and caramelized.

While the onions are roasting, heat the vegetable broth in a saucepan over medium heat.

Once the onions are done, remove them from the oven and transfer them to the saucepan with the vegetable broth.

Let the onions simmer in the broth for 5 minutes to absorb the flavors.

While the onions are simmering, toast the baguette slices in the oven or on a stovetop grill until crispy.

Place the toasted baguette slices on a baking sheet and sprinkle them with grated Gruyere cheese.

Broil the cheese-topped baguette slices in the oven until the cheese is melted and bubbly.

Serve the roasted French onion soup in individual bowls, with a cheese-topped baguette slice on top.
