Preheat the oven to 350°F (175°C).

Grease a round cake pan and line the bottom with parchment paper.

Slice the limes into thin rounds and arrange them on the bottom of the cake pan.

Sprinkle 1/2 cup of sugar over the limes.

In a mixing bowl, combine the flour, baking powder, salt, and remaining sugar.

In a separate bowl, whisk together the vegetable oil, plant-based milk, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Pour the batter over the limes in the cake pan.

Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes.

Invert the cake onto a serving plate and remove the parchment paper.
