  1. Preheat a grill or grill pan over medium heat.
  2. Grill the vegetables until tender and slightly charred, about 5 minutes per side. Set aside.
  3. In a small bowl, combine the sliced cucumber, red onion, and lemon juice. Season with salt and pepper.
  4. Lay out the tortillas and spread a generous amount of hummus on each.
  5. Layer the grilled vegetables, cherry tomatoes, cucumber-onion mixture, fresh spinach leaves, and sliced avocado on top of the hummus.
  6. Season with additional salt and pepper if desired.
  7. Roll up the tortillas tightly, tucking in the sides as you go.
  8. Slice the wraps in half diagonally and serve.
