  1. Peel and chop the vegetables.

  3. Add the beetroots, carrots, and tomato paste. Cook for 5 minutes.
  4. Add the cabbage, potatoes, bay leaves, salt, and pepper. Pour in enough water to cover the vegetables.
  5. Bring to a boil, then reduce the heat and simmer for about 40 minutes or until the vegetables are tender.
  6. Stir in the vinegar and let the soup rest for 10 minutes.
  7. Serve hot with a dollop of sour cream and garnish with fresh dill.
