  2. Cut the butternut squash in half lengthwise, remove the seeds, and place the halves on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 30 minutes or until the squash is tender.
  3. While the squash is roasting, heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  4. Add the cumin, coriander, and ground cinnamon to the pot, and cook for another minute to release their flavors.
  5. Scoop out the roasted squash flesh and add it to the pot. Stir in the vegetable stock, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
  6. Use an immersion blender or transfer the mixture to a blender to puree until smooth.
