Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic. Sauté until onion becomes translucent.

Add canned tomatoes, vegetable stock, salt, and black pepper. Bring to a boil.

Remove from heat and let it cool slightly.

Blend the soup until smooth using an immersion blender or a regular blender.
