  1. Wash and soak basmati rice in water for 30 minutes.
  2. Heat oil in a pan and add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods.
  3. Add sliced onions and chopped green chilies. Sauté until onions turn golden brown.
  4. Add ginger-garlic paste and sauté for a minute.
  5. Add chopped tomatoes and cook until they become mushy.
  6. Add turmeric powder, red chili powder, and garam masala powder. Mix well.
  7. Drain the soaked rice and add it to the pan. Stir gently to combine with the tomato mixture.
  8. Add 3 cups of water and salt. Cover and cook on low heat until the rice is cooked and the water is absorbed.
  9. In a separate pan, heat a little oil and fry cashews and raisins until golden brown.
  10. Once the rice is cooked, remove from heat and let it rest for 5 minutes.
  11. Garnish with fried cashews, raisins, and chopped coriander leaves.
  12. Serve hot and enjoy!
