  1. Rinse and drain the white beans.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and diced celery stalks. Cook until vegetables are tender.
  3. Add white beans, vegetable broth, dried thyme, bay leaves, salt, and black pepper to the pot.
  4. Bring the soup to a boil, then reduce heat and let it simmer for about 30 minutes, or until the beans are soft.
  5. Remove the bay leaves and use an immersion blender to partially puree the soup.
  6. Stir in lemon juice and fresh parsley.
