Press tofu to remove excess water and cut into cubes.

Heat vegetable oil in a pan and add garlic and ginger. Cook for a minute.

Add tofu cubes and stir fry until golden brown.

Add mixed vegetables and cook for 2 minutes.

In a separate bowl, mix soy sauce, cornstarch, water, salt, and black pepper to make the gravy.

Pour the gravy over the stir fry and cook for another 2 minutes.

Serve hot with rice or noodles.
