  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the coconut flakes, almond flour, coconut flour, baking powder, and salt.
  3. In a separate microwave-safe bowl, melt the coconut oil. Add the maple syrup and vanilla extract to the melted coconut oil and stir until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Using a cookie scoop or tablespoon, drop rounded dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
  6. Bake for 10-12 minutes, or until the edges are golden brown.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
